Sample Menu for School Groups
Meals*
Monday
Lunch: Soup, salad, rice, and fresh baked bread.
Dinner: Spaghetti with vegetarian tomato sauce, garlic bread, salad, and meatballs.
Tuesday
Breakfast: Pancakes and syrup. Cold cereals, granola, raisins, cranberries, milk, soy or rice milk, yoghurt, apples, oranges, bananas, toast, butter, jam, peanut butter, orange juice, coffee, tea, and hot chocolate.
Lunch: Hot dogs (beef, chicken or vegetarian), whole grain and white buns, toppings, soup, salad, and potato chips.
Dinner: Bean burritos or chili with corn bread, rice, sour cream, salsa, salad, and chocolate cake.
Wednesday
Breakfast: Toaster waffles and syrup. Cold cereals, toast, spreads, fruit, and beverages as listed above.
Lunch: Quesadillas, tortilla chips, guacamole, sour cream, salsa, soup, salad, and Gallo Pinto (rice and beans).
Dinner: Fish (cod or salmon), baked potatoes or oven fries, sour cream, butter, chives, salad, and seasonal vegetables.
Thursday
Breakfast: Bacon, eggs, and home fries. Cold cereals, toast, spreads, fruit, and beverages as listed above.
Lunch: Grilled cheese sandwiches, salad, tomato soup, and cookies.
Dinner: Homemade pizza (vegetarian and meat), salad, vegetables, and fruit.
Friday
Breakfast: Muffins or scones. Cold cereals, toast, spreads, fruit, and beverages as listed above.
Lunch: Closing barbeque. Hamburgers (beef, chicken, and vegetarian), toppings (tomatoes, lettuce, cheese, onions, ketchup, mustard, relish, and hot peppers), salad, chips, fruit, and cookies or cake.
*We can accommodate most special diets and group requests with advance notice and discussion with the chef.
As part of the student participation in the camp, each student will help with one of the evening meal clean-ups under the supervision of a staff member. With 4 evening meals, there will be approximately 7 students on kitchen duty each evening that lasts approximately 45 minutes. After each meal or snack, students are expected to dispose of excess food in the compost, recycle beverage containers, throw away their garbage, and wash their dishes and place them in the rack for sterilization.
Water
We are on an excellent well which is tested monthly by the Vancouver Island Health Authority. Thus tap water is always available. For environmental reasons, we don’t provide bottled water.
Snacks
Fruit (apples, oranges, bananas) and granola bars, coffee, tea, hot chocolate, and fruit drinks are always available outside the kitchen and are free. Noodles are usually available with assistance from a staff member.
Concession
The snack concession stand is open after meals times. Students pay cash. There is a limit of one drink item and one snack item per day (we find that this is important for a 12-14 year old). Concession items usually include: chocolate bars, chips, pop, juice, popcorn, cookies, hot items (pizza pops and/or burritos), and ice cream novelties. We can modify our concession contents to suit your group.
